Experimenting with Food

During the two weeks before my surgery I'm only able to eat 3 Optifast meals and 5 cups of vegetables with no added fats.

This has lead to much experimentation with simple low carb green vegetables.

I've just made Zucchini Chips!

I used a mandolin to slice the zucchinis thinly and laid them on baking paper and baked with salt and pepper

They are delicious

I burnt the first batch. So keep an eye on them very closely!
The oven is on 180c and make sure you turn them after about 12 minutes.

I now have carrots in the oven.

Lets see if they turn out as successful!

Day Three

Well.... For dinner tonight I have made from fresh/dried chipotle chilis a beautiful red sauce with no fat just fantastic green vegetables.

Looks delicious.

Can only taste delicious

Feeling a bit headachy today but that is to be expected. And a little hungrier than I have been but that might just be my body realising what I'm actually doing.

I averaging about 2.5l of water a day which is great. But I have peed what feels like 100x today.

I'm looking forward thinner tonight.

4 dried and soaked chipotle chilis
2 cans of tomatoes
1/2 onion in the grill
3 garlic clover in the grill

Purée until well combined

In a very hot pan fry ( no oil just non stick pan) for 5 mins

Perfection!

Essential Reading - What will I be eating??

I love food.
I love good quality produce.
I love cooking.
I love the process of cooking.

So...... I wanted to do a little more research into what I would be eating after surgery
and these few resources have come up. I'm going to do an amazon order later today
and add thee few books to my essential reading list.

A couple of online recipe resources for ideas during recovery time

http://recipes.sparkpeople.com/cookbooks.asp?cookbook=624196

http://recipes.sparkpeople.com/cookbooks.asp?cookbook=441790

A book that comes highly recommended available at amazon $11.95

Some more essential reading from amazon $8.00

I think my thermomix which is in a box in my cellar might come in handy when
prepping puréed foods. I hang my head in shame as I hate the idea of using
the thermomix. It just goes against all my loves of cooking and food preparation. Oiiiii

Shopping for Surgery

23 DAYS TO GO

Today, being on holidays I decided on a little shopping trip to prepare for my hospital visit.

Ill be spending at least 3 days in hospital. So to prepare for my visit new pajamas, robe, slippers and underwear were in order.

I purchased two beautiful Jane Lamerton pajama sets. And a very beautiful Leona Edmiston robe. I had to make sure everything was loose and not tight around the waist as that's where I will have five incisions from the surgery.

And my beautiful new robe.

They are going to be perfect to wear both while at the hospital and while recovering at home.

This is a diagram of where my incisions will be for the surgery.

So I really need to ensure that I have nothing restricting these areas.

For the week I have left before I start my pre op diet I'm enjoying everything and anything. And then next weekend I'm planning on a Last Supper, Gluttonous Event with family and friends.

It's going to be great!

A Decision Made

All my life I have struggled with my weight.  I was always the big kid growing up and It's never changed.  I've been on every diet and weight loss program imaginable.

The time has come to really gain control over it.

I have booked in to have gastric sleeve surgery in August.  I've never been happier.

Me in 2009.

Me in January.

I'm tired of being the big kid. And August 6 is my key to that.

Ill take some post op photos soon. Not yet revealing my starting weight. That will come with time
